How to make Mutton Biryani!

Today I am sharing new recipe of how to make Mutton Biryani. It is very famous. I prepared this biryani once and all of my friends loved it.  People think that it might be hard to make biryani but it is really simple. Follow this easy step-by-step recipe to make mutton biryani easily.

Ingredients

  1.  Mutton 1 kg with bone
  2. Boiled egg 3-4 pieces
  3. Cooked rice 2 large bowl
  4. Oil or butter 2 tbs
  5. Tomatoes 500 gm
  6. Bay leaves 4-5
  7. Ginger garlic paste 2 tbs
  8. Green cardamom (sukmel) 5 pieces
  9. Cinnamon stick 2 large pieces
  10. Cumin powder 1/2 tbs
  11. Coriander powder 1/2 tbs
  12. Turmeric powder tbs
  13.  Red chilly powder 1/2 tbs
  14. Salt to taste
  15. Water as required
  16. Coriander leaf for garnish

   Preparation

Step 1. Turn on flame  and heat the oil in a pressure cooker.  Add chopped onion, bay leaves, green cardamom, cinnamon stick. Fry until light brown. Add turmeric powder and mutton pieces. Stir and fry the mixture.

Step 2.  When the mutton is frying, cook rice in rice cooker adding a pinch of salt. As water starts to come off from the mutton while frying, add red chilly powder, cumin powder, coriander powder, salt,  ginger garlic paste and chopped tomatoes. Mix well. Step 3.  Add water and put on the pressure cooker lid. Cook in low flame for 1 whistle and let it whistle until the sound stops. When the pressure is off, open the lid.

How to make Nepali style home made pickle (achar)!

Today I am sharing a new recipe – how to make Nepali style pickle (achar).  It can be served as a side dish.  All my friends have liked this pickle the most.  We can serve with beaten rice, poori tarkari, selroti etc.  Generally, I serve this pickle with rice (dal bhat). We can find the ingredients for this anytime anywhere. It is really simple to make. I hope you enjoy this recipe too.

ingredients required for the pickle

Ingredients

  1.  White or red radish 200gm (मुला)
  2. Local or any type cucumber 200 gm
  3. Cherry tomatoes (or any other ripe tomatoes) 200 gm
  4. Fresh green chillies 3 pieces chopped
  5.  Lemon 2 pieces
  6. Sesame seed 100 gm (तिल)
  7. Salt to taste
  8. Fenugreek seed half tablespoon
  9. Cilantro 1 bunch for garnish (धनियाँ)

Step 1. First wash  radishes, cucumber properly and chop into small same sized pieces. Step 2.  Take a container and put all the chopped radish and cucumber into it.  Spray half a tablespoon salt over the chopped cucumber and radish. Cover the container and  leave aside for one hour until all the vegetable water comes out.  This will stop your pickle from being watery and soggy. Step 3. Take tomatoes and fine chop them. Cook the chopped tomatoes with a cup of water until cooked. After cooked fully, the tomatoes looks like tomato paste as shown in the photo below.  Continue reading

How to Make Home Made Chicken Chilly Momo (C Momo)?

Today I am sharing recipe of how to make home made chicken chilly momo (chilly dumpling). If you are thinking what to make for khaja (snacks) any time, we can make many items even from momo like steam momo, kothe momo (browned on one side), fried momo and chilly momo. The filling mixture can also be as different as you like. Here for this recipe, I am using mince chicken meat. You can serve for your special  guests and friends. If you are thinking to make something new, quick and easy, make this. I really enjoy making this dish. It looks so nice too.

Ingredients  

  1.  White  flour 1 kg
  2. Water as required for kneading dough
  3. Dice cut capsicum 200 mg
  4. Dice cut red onion 200 gm
  5. Dice cut tomato big 200 gm
  6. Dark soy sauce 2 tbsp
  7. Salt to taste
  8. Black pepper 1/2 tbsp
  9. Red chilli paste 1 tbsp
  10. Coriander leaves or spring onion for garnish

Mixture for filling

  1.  Mince chicken breast  500 gm
  2. Red onion 250 gm
  3. Butter 200 gm
  4. Meat masala 50 gm
  5. Ginger garlic paste  100 gm
  6. Coriander leaf 1 bunch 50 gm
  7. Salt to taste

Direction for dough

First take a medium large container and mix the flour and water very well, knead and keep adding water until you make a pretty smooth ball of dough. Then knead the dough very well until soft.  Now leave your dough in the pot or wrapping by cling film foil. You shout not let the dough dry out, or it will be hard to roll so always cover it with plastic or foil.2.

Directions for mixture

Take a bowl and add the chicken mince. You can chop chicken breast by hand if you prefer. But its easier to buy the minced meat in market. I also bought minced meat in a market for this particular blog post. Add all the above mentioned ingredients for mixture except butter.Now heat a pan and melt the butter. When it melts, add it in the above the mixture and add the salt. Mix all the ingredients properly by spatula or hand. If you are using hand you should wear gloves. 3. Directions for making Momo

Place the dough on large chopping board and use rolling pin to roll it out quite thinly. Cut out small circular dough by a sharp edged bowl or glass. Put the momo filling in center and start wrapping up those momos. Pinch the edges of the dough together from one side, and you should continue pinching around the circle little by little, keeping your thumb in place , and continue along the edge of the circle  with your finger grabbing the next little piece of dough.4 Directions of deep fry momo:

Heat oil in medium heat. Add momo one by one into hot oil until they turn golden brown. Remove momo from the oil after they turn golden brown. 5. Directions for frying with vegetables

Heat a large pan and add oil. Don’t add too much oil because it is already deep fried. Once the oil heats up, first add chopped onion, and then fry for a few minutes. Then add chopped capsicum and chopped tomatoes. Fry for a few minutes and then add fry momo. Stir well. Then add soy sauce, salt and sprinkle black pepper.

Add sprig onions or freshly chopped onion leaves.

 

The chicken chilly momo is ready. Enjoy hot!

Crispy Chicken: Easy and quick recipe

Today, I am sharing a new recipe on how to make crispy chicken. It’s for my sister, she is so excited for this recipe. We made this dish on the first phase election day i.e 31st May as we had a day off.  We enjoyed a lot with friends and sisters. She took the recipe  photos. My sister is the one in the photo above, we enjoyed a lot in the trek.

Ingredients:

  1. Chicken leg or wing – 9 pieces
  2.  Whole egg – 2 pieces
  3.  Water- 2 litres
  4. Bay leaf -4/ 5 leafs
  5.  Green cardamom -10 pieces
  6. Red whole onion – 2 pieces
  7.  Celery- 1 small bunch
  8. Rosemary -1 small bunch
  9. Bread crumbs for stuffing
  10.  Salt to taste
  11. Oil for deep fry as required

Ingredients for marinate

  1.  Ginger garlic paste – 2 tbsp
  2.  Light soy sauce –  2 tbsp
  3.  Salt to taste
  4. Black pepper – 1/2 tbsp

How to Make Aloo Puri with Cheese!!

Today I am sharing recipe of how to make aloo puri (potato fried roti) with cheese. Although while making aloo puri, its not always necessary to use cheese.  I like cheese so much that is why I created this recipe.   If you are thinking what to make for khaja (snacks) any time, you can follow this which is very simple.  I tried this recipe first in my office when I had to come up with a new dish. It tastes very yummy and is crunchy and mouth watering. I am also using New Zealand spinach in this recipe which I love love. I think we cannot find this easily in Kathmandu. I had planted this spinach at my office rooftop garden.  For anyone interested, we can find New Zealand spinach seeds in flower nursery. Here are some photos of my rooftop garden.

So, let’s start.

  1.  White flour 1kg and 1 cup extra
  2. New Zealand  spinach 1 large bowl (use any other spinach if you don’t have this)
  3. Boiled potatoes 500gm
  4. Fresh chopped coriander leaf 1 medium bowl
  5. Mozzarella grated cheese 200 gm
  6. Red onion chopped 1 medium bowl
  7. Salt to taste
  8. Water 1 cup

How to make Aloo Tama (Potato with Bamboo Shoot Curry)

Today I am sharing the recipe for aloo tama or potato with bamboo shoot curry. It is very famous and popular in Nepal.  I have two methods to cook the bamboo shoots. Today I am showing you the easy process. The final curry is a little sour and really yummy. One of my friend requested me to write this recipe. So, here we go!

Ingredients

  1. Black eyed beans  (Soaked overnight )1/2 kg
  2. Boiled potato 1kg
  3. Bamboo sho0t (tama) 500gm
  4. Onion chopped 30gm
  5. Tomato chopped 500gm(about 8-10 pieces)
  6. Ginger Garlic paste 2 tbsp
  7. Oil 50ml
  8. Salt to taste
  9. Turmeric powder 1/2 tbsp
  10. Cumin powder 1/2 tbsp
  11. Red chili powder 1/2 tbsp
  12. Garam masala 1/2 tbsp
  13. Water as required
  14. Green coriander chopped for garnish

Preparation

  1. Soak the black eyed beans in water one day or over night.

2. Boil the potatoes and peel nicely. Dice them and set aside.

How to make Yam Chilly Fry (तरुल चिल्ली फ्राइ)

Today, I am very excited to be sharing a dish I just discovered with you all. It is the month of Magh in Nepal and everywhere we look, we can find lots of yam(तरुल). My dish is Yam Chilly Fry. Well, you must all be very familiar with chicken chilly, potato fry chilly and other chilly fries that is easily available in most restaurants. But this fried chilly is an entirely new dish which I haven’t found anywhere till now.

Lots of tuber options in Magh

Its a dish that I made a week ago in Maghe Sakranti and I really liked it. In this festive season of Magh, there are many different kinds of delicious tubers like sweet potatoes (शक्खरखन्ड ), yam, taro (पिडाँलु), इस्कुसको जरा and many more. In the morning of Maghe Sakranti, my friend had boiled a lot of yam in the morning. We were eating the boiled yam, and in my mind I was thinking if there’s a different way we can eat yam. So I tried making some chilly fried yam. The result had amazing taste. I really enjoyed it, and so did my friends. Therefore, I decided to share this recipe with you all as this is the perfect season to find and make a yam dish. If you would like a twist on the traditional maghe sakrati dish, you can also follow this recipe. It is very easy to make but tastes so yummy.

Ingredients

  1.  Boiled Yam 500gm
  2. Capsicum 200 gm
  3. Onion 200gm
  4. Tomato 200gm
  5. Oil as required for deep fry
  6. Salt to taste
  7. Black pepper 1/2 tbsp
  8. Red chilly powder 1 tbsp
  9. Fresh Coriander 1 bunch for garnish
  10. Dark Thai soy sauce 2 tbsp

Direction

  1. Take a large sauce pan or stock pot and boil the yam until cooked. You can also simply cook the yam in  a pressure cooker. After the yam is cooked, let it cool. Remove the skin part and cut into rounded slices as shown below.

2. Heat a deep pan or karai and add oil for deep fry. When the oil is hot and smoking, add the sliced yam pieces and remove them as they become crunchy and slightly golden around the edges.

How to make Green Momo Dumpling with Soup (Jhol Momo)!

Hello, all my dear friends!

Today I am writing a recipe about green colored dumpling with soup which is good for this cold cold winter. Its very easy to prepare. We can make dumplings of different colors by using various vegetables. I am using spinach leaf here to give nice green color to my dumplings.

Ingredients for green colored dumpling!

For dough

  • Flour 4 cups
  • Spinach leaf 2 bunch
  • Whole egg 2 pieces
  • Salt 1 pinch
  • Sunflower oil 1 tablespoon

For filling mixture

  • Chicken minced  500gm
  • Fine chopped 3 whole onion
  • Garlic ginger paste 2 tablespoon
  • Salt to taste
  • Momo masala 1 tablespoon

For dumpling soup 

  • Ginger fine chopped
  • Garlic fine chopped
  • Butter or oil 200ml
  • White flour 2 tablespoon
  • Salt to taste
  • Vegetable stock or chicken stock 2 liter
  • Mix dried herbs(basil, rosemary, thyme, oregano etc)

Preparation

Choose only leaves of the spinach and wash thoroughly. Blanch the spinach leaves for 1 minute in salted water and then blend well in blender to get a green paste. Knead dough with white flour, green spinach paste, salt, oil and egg.  Wrap this dough in clingfilm paper or plastic and keep aside.

Now let’s prepare filling mixture for the inside of dumpling. I bought chicken minced meat in market, but if you prefer you can make minced meat at home. Let’s add this chicken minced meat in a bowl and add fine chopped onion, ginger garlic paste, salt and momo masala. Mix well. Our filling is ready.

Perfect for Winter: Homemade Chicken Broth Soup!

I am writing a new recipe about how to make chicken broth soup. This is my own recipe.  It’s easy to make and good for winter. Last winter, I had made this dish which my friends enjoyed a lot. Therefore, with the winter in our doorstep I thought of sharing this recipe. I think this soup will taste good with bread items as well.

Ingredients

  1.  500 gm chicken breast with bone large pieces
  2.  One cup diced carrot
  3. One cup fresh beans sliced
  4. One cup sliced cabbage
  5. One cup fresh green pea
  6.  One cup diced mushroom
  7. one cup diced capsicum
  8. Onion 2 pieces chopped
  9. Celery 1 bunch
  10. Bay leaf 1o pieces
  11.  Rosemary 1/2 tsp
  12. Thyme 1/2 tsp
  13. Ginger 1 small piece chopped
  14. Basil one bunch
  15.  Garlic whole
  16.  Corn flour 1 tsp
  17. 1/2 tsp flour
  18. Salt to taste
  19. Black pepper 1/2 tsp

Preparation

We need a stock pot or deep sauce pan for this. In the pot, add ginger, bay leaf, celery, rosemary, thyme, basil and chopped onion. Then add 3-4 liter water and chicken. Put the pot in heat and boil until the chicken is cooked.

While the chicken is boiling, cut all the vegetables in small pieces. You can cut the vegetables in any shape that you like.

How to make Nepali Daal Bhat (Rice and Lentil Soup)

Hello all!

Today I am writing a recipe for Daal Bhat-Nepali rice and lentil dish.  Since dal bhat is what most Nepali housholds eat twice a day, it is very easy to make for most of us. The reason I am writing this recipe is because of Rene didi’s request.  She had come to Kathmandu from Canada and I had invited her for lunch. She came to my office and had Daal Bhat with us.  Dal bhat is the most common and classic Nepali recipe. It  very easy to make.

Ingredients for Daal

  • 500 gm mix lentils (You can find many varieties of lentils easily. I usually go with a mixture of different lentils in my daal)
  • 1 liter water
  • Oil or butter 100ml
  • Onion 50gm
  • Garlic ginger paste 50gm
  • Tomato 50gm
  • Turmeric powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Salt to taste
  • Coriander leaf or (Jimbu) for garnish.

Ingredients for Rice 

  • 2 Cups rice (preferably Basmati)
  • 4 Cups of water
  • If like, you can add butter 1 tsp

Preparation for Rice

Wash  rice and soak for 5 minutes. Cooking in a pot instead of rice cooker makes it taste better as well as soft and fluffy. In a stock pot, add the rice and water. Cover and bring to boil. Once the rice starts to boil, turn the heat to low and cook, covered for 5 more minutes until done. Best way to know if rice is cooked- take out a grain of cooked rice squeeze it with thumb and a finger. If you feel any hard stuff inside the rice, it is not cooked yet. But if the grain is soft and mushy, its cooked.

Preparation for Daal

Wash lentils and soak lentils for 10- 15 minute. If you are not using pressure cooker, soak the lentils  over night. I am cooking in a pressure cooker here. Remove anything that floats on the surface. After that, drain extra water.Repeat the washing with fresh water until you are satisfied no husks are left.
