I am writing a new recipe about how to make chicken broth soup. This is my own recipe. It’s easy to make and good for winter. Last winter, I had made this dish which my friends enjoyed a lot. Therefore, with the winter in our doorstep I thought of sharing this recipe. I think this soup will taste good with bread items as well.
Ingredients
- 500 gm chicken breast with bone large pieces
- One cup diced carrot
- One cup fresh beans sliced
- One cup sliced cabbage
- One cup fresh green pea
- One cup diced mushroom
- one cup diced capsicum
- Onion 2 pieces chopped
- Celery 1 bunch
- Bay leaf 1o pieces
- Rosemary 1/2 tsp
- Thyme 1/2 tsp
- Ginger 1 small piece chopped
- Basil one bunch
- Garlic whole
- Corn flour 1 tsp
- 1/2 tsp flour
- Salt to taste
- Black pepper 1/2 tsp
Preparation
We need a stock pot or deep sauce pan for this. In the pot, add ginger, bay leaf, celery, rosemary, thyme, basil and chopped onion. Then add 3-4 liter water and chicken. Put the pot in heat and boil until the chicken is cooked.
While the chicken is boiling, cut all the vegetables in small pieces. You can cut the vegetables in any shape that you like.
After the chicken is cooked, remove the pot from heat. Separate the chicken using tong or fork in a separate pot. Strain the remaining stock into a jar or any other container.
Heat a large pan and add butter. When the butter starts melting, add fine chopped garlic. When the garlic turns light brown, add flour and let it turn brown. Add mushroom first. Adding the mushrooms first gives good flavors. When the mushroom is light brown, add all the other vegetables.
Fry all the vegetables for sometimes. Meanwhile, chop the cooked chicken into small pieces while carefully removing all the bones. Add this to the frying vegetables. Now, pour the stock which we had previously put in the separate container. Let the mixture boil. Add cornflour to a cup of cold water, whisk well and add into the boiling soup. And add salt and pepper according to taste. Boil for about 2 more minutes as the soup becomes thick.
Now you can serve hot chicken broth soup. Enjoy with rice, bread, roti or just the soup. Enjoy winter!
